Right at the top of the Dalt Vila UNESCO World Heritage Site, sitting in grand style at this historic spot, you find chef Edwin Vinke’s unique celebration of culinary excellence and stimulating creative ambience, 1742. The journey to 1742 and all it involves is refreshing, inspiring and, above all, deliciously rewarding – hardly surprising when you consider the numerous awards and Michelin stars its creator has left in his wake.
From the outset it is clear that 1742 is a whole experience that goes way beyond its world-class food. The tone is set as soon as you are picked up by the exclusive valet service, which takes you up towards the magnificence of Dalt Vila, with its incredible views all around, and into the restaurant itself. History meets modernity with a dash of theatre.
After being personally welcomed, you are transported into a celebration of the classical: Doric pillars
and baroque paintings, a view from the terrace that’s unrivalled on the island, and even a visit to the cellar to select the wines for the evening: it’s all designed to entice, enthral and amuse in equal measure. Where else can you enjoy a live operatic accompaniment to your meal in such a setting?
The Culinary Experience
With a menu celebrating the finest seafood from the Mediterranean created by a man who has earned Michelin stars for his seafood dishes, expect the magical, delightful, and mind-blowing. Seven courses over several hours might include smoked carrot that tastes like no carrot you’ve ever had before, shellfish in peppery herbs, or sturgeon dressed in caviar. A carefully curated international wine list – encased in a leather-bound case designed by Ibiza legend Pedro Planells – ensures you’ll have the perfect accompaniment to every mouthful.
A Final Thought
“There are experiences that are impossible to explain in words,” Vinke explains. “You have to come and experience it yourself with all five senses.” We couldn’t agree more.
