CIELITO, O Beach’s new signature Mexican restaurant, is now open on the rooftop of Hotel Bonito (part of the NCalma Hotels group) in Sant Antoni de Portmany. Executive Chef Gabriel Sunyer has crafted a unique fine dining experience that blends authentic products imported from Mexico with techniques and recipes from his own culinary heritage — taking your senses to new heights.
The journey begins with starters full of texture and freshness — such as artisanal elotes with guacamole or esquites with chili and citrus — and continues with dishes that taste of the sea and spice, like red prawn aguachile or cured sea bass ceviche. Tacos, in seafood or cochinita pibil versions, lead the way to main courses such as “petrolero” prawns, the Tomahawk El Guerrero, or zarandeado sea bass. Desserts — mango with chamoy, tres leches, or Oaxacan chocolate — round off a bold and colorful proposal. And when night falls, CIELITO transforms: in collaboration with O Beach, it becomes a full sensory experience with cocktails, music, and views over the Mediterranean.
