Salt is history.

The history of Ibiza cannot be understood without its salt flats. Since the Carthaginian era, salt extraction has been one of the island’s most important activities. The Salinas of Ibiza are part of the Parc Natural de ses Salines, one of the most important protected areas in the Balearic Islands and officially listed as a Site of Cultural Interest (BIC). For centuries, they have generated wealth, shaped the landscape and defined a way of life tied to the sea. The Salt Fair brings this heritage back to life through historical re-enactments, exhibitions, talks and guided visits to heritage sites.

Salt is community.

For generations, salt workers played a key role in the economy of Sant Josep and the whole island. Knowledge passed from parents to children, traditional tools and a deep respect for nature define a craft that’s part of the island’s intangible heritage. The Fair pays tribute to these people with demonstrations of their work, displays of historic tools and personal stories that help explain their significance.

Salt is nature.

The Parc Natural de Ses Salines d’Eivissa I Formentera is a protected area that holds great biodiversity. It includes both marine and terrestrial zones, such as salt ponds, beaches and dune systems. Salt production, in balance with the environment, has helped preserve endemic species and supported the migration of birds such as flamingos. The Salt Fair offers interpretive activities that let visitors get a closer look at this precious ecosystem.

Salt is gastronomy.

Ibiza’s salt, naturally harvested through evaporation, contains minerals and trace elements that give it a unique flavor. Today it’s used by renowned chefs, while remaining a staple in local culinary traditions. During the Fair, visitors can enjoy cooking workshops, tastings and food demos that celebrate this zero-kilometer, sustainable and versatile ingredient.

The Salt Fair is fun.

From October 17 to 19, the Fair organized by the Sant Josep town council turns the town into a gathering place for culture, nature and celebration. The program includes live music, guided tours of the natural and cultural heritage sites, family-friendly activities, a local produce market, kids’ workshops and events for all ages.
