Filet beef tartare, triple-fried Pont Neuf Potatoes
If you are going to indulge in steak tartare – one of life’s true pleasures – it does not get much finer than this simple, exquisite, perfect dish. The top-grade meat is seasoned just as it should be, the organic egg stays firmly in place and the potatoes are inspired: crisp and savoury, they complement the filet steak like they were made for each other.
Formentera Red Prawn carpaccio, yuzu pearl, coral seasoning
We don’t want to put presentation before taste, but this is a stunning dish to look at. And it just gets better as you eat. The prawn sits luminescent under the bright yellow yuzu pearls with a vibrant red crunchy coral wafer finishing this little work of art. A triumph of taste and texture.
Pan-Seared Black Cod, smoked aubergine, stovetop garlic, tamarind
This is how all pan-seared black cod should be cooked – by law. We know it’s not easy, but that’s why this is so very satisfying. Soft and tender, the cod is seared to perfection, creating a small, delicious crust. A bed of tender, almost sweet aubergine and a light wafer deliver a sublime mouthful.
